Yield: 20 to 40 pieces

Preparation time: 10 minutes

Ingredients

6-7 cups confectioners sugar (may take slightly more or less for desired consistency)

1/2 cup butter

2 teaspoons vanilla extract

1/2 cup creamy peanut butter

Procedure

1) Melt butter

2) Add vanilla extract

3) Stir in confectioners sugar until the mixture can be formed into a large ball

4) Roll out confectioners sugar ball on a flat surface (wax paper may help)

5) Put a thin layer of peanut butter across the confection sugar layer

6) Roll it from one end to the other.

7) Cut into pieces and place on a serving dish or plate

8) Refrigerate for at least one hour

9) Enjoy!

Notes:

Yes! This used to be known as potato candy, and you can add potatoes to the mixture, if you wish. If you do, boil one to two potatoes and allow them to completely cool (naturally) before mashing them for the mixture. I caution against using instant potato mix or leftover potatoes (especially those that have been refrigerated).

I use vegan butter and the result is as tasty as Nannie’s butter recipe.

You may use crunchy peanut butter if you prefer the texture.
