In every household, there is a staple recipe, whether it is macaroni and cheese, or a copied dish from a five star restaurant. It may seem simple to the outside observer, but it is a culinary delight to those who take the time to prepare it, tweaking the ingredients over the years to arrive at the perfect taste.
At my house, my children and I enjoyed tuna noodle casserole. After a few years, and many combinations and substitutions of ingredients, it is still something my adult son asks me to make.
I am now a vegetarian, so I use more vegetables instead of tuna, and I substitute other creamy soups that are not made with meat. I invite you to use my recipe as a guide to make your own family casserole!

Ingredients
- 1/2 cup of mixed vegetables, canned (if frozen, adjust baking time according to the package of vegetables)
- One 22.6 ounce can of cream of chicken soup (cream of broccoli or mushroom may be substituted, if preferred)
- One 12 ounce can of tuna (you may omit this ingredient if you wish to make it a vegetarian dish)
- Two to four slices of American cheese (any cheese, including vegan cheese, may be substituted)
- One cup of egg noodles (cooked)
- One to two cups (depending on the desired crunchiness) of salted potato chips (crushed)
Procedure
- Preheat the oven to 350 degrees.
- Boil the water in a medium sauce pan and add the noodles. Stir occasionally, until the noodles reach the desired tenderness
- Put half the cream of chicken soup into a bowl.
- Add the vegetables, tuna, noodles, and the other half of the cream of chicken soup. Mix well.
- Spread half of the mixture evenly into a 9 X 9 casserole dish.
- Place two to four slices of cheese on top of the mixture.
- Spread the other half of the mixture over the cheese.
- Bake the casserole at 350 degrees for fifteen minutes, or until the cheese has melted.
- Sprinkle the chips on the casserole, as desired, for added crunch!
- Allow to cool, but enjoy warm!
